Ingredients
• ½ avocado, mashed
• 1 Tbsp. Olive Your Heart, Lemon
• 1½ Tbsp. red onion, minced
• 1 Tbsp. grated parmesan cheese
• ¼ tsp. salt
• ¾ cup arugula
• 1 whole artichoke heart (from a can or jar), thinly sliced
• 2 slices whole-grain bread, toasted
Directions
1. Stir together mashed avocado, Olive Your Heart, onion, cheese, and salt in a medium bowl.
2. Evenly divide the arugula and avocado on toasted bread slices; top with artichoke slices.
3. Sprinkle with additional parmesan cheese and cracked black pepper, if desired.
